CAESAR DRESSING

From 1982 to 1989, I was the Co-owner and Chief Bottlewasher of a quaint, turn-of-the-century Tavern in Fell's Point ~

Henninger's Ale House

I made our Salad Dressings from scratch ~ here's a great recipe for the Caesar Salad Dressing that we served to our customers at Henninger's.

It's sure to please your tastebuds !

3/4 Cup Olive Oil

1/4 Cup Red Wine Vinegar

6 Anchovy Fillets

4 Tblsp minced fresh Garlic

1 Tblsp fresh Lemon juice

1 Tblsp Dijon Mustard

1 Tsp white pepper

1 Cup Parmesan Cheese

Combine all of the ingredients except the Olive Oil. Gradually incorporate the Olive Oil in a thin stream. Adjust the seasoning as needed (as an option you can add 1 tblsp. of Worcestershire sauce). Refrigerate Dressing
